Quick & Healthy Valentine Meal for Two
Spinach & Strawberry Salad
Ingredients:
Spinach (4 handfulls)
4 Strawberries
Feta (to taste)
Balsamic Vinaigrette (to taste)
Divide your spinach onto plates. Tops with strawberries, feta & a balsamic vinaigrette.
Simple - delicious - good for you.
One Pan Steak Potatoes & Broccoli
Ingredients:
4 C Mini Potatoes
1 1/2 C. Cherry Tomatoes
4 C Broccoli (chopped into florets)
2 TBSP Avocado Oil
1 TBSP Italian Seasoning
8 oz. Top Sirloin Steak
Sea Salt & Black Pepper (to taste)
Preheat oven to 375 degrees.
Toss the potatoes, cherry tomatoes, and broccoli with the oil and sprinkle with Italian seasoning. Spread across a baking sheet and roast for 20 min.
After 20 min, heat a skillet to medium/high heat. Brown the steak on both sides for 1-2 minutes. Remove the steak from the pan and add to the baking sheet with the veggies. Return to oven for an additional 10 minutes, or until steak is cooked to your liking.
Remove pan from the oven, divide onto plates and enjoy!
Dark Chocolate Love Bites
Ingredients:
3 1/2 oz. Dark, Organic Chocolate (at least 70% cacao)
1/4 C. Pomegranate Seeds
1/4 C. Slivered Almonds
Spread a piece of wax paper on countertop. Melt chocolate. Dollop a heaping teaspoon of chocolate onto wax paper so it forms a circle. Repeat until all chocolate has been used up. Immediately place 4-5 pomegranate seeds in the center of each chocolate and then surround with slivered almonds.
Let chocolate cool for 1 hour before peeling off the wax paper.
